At Shimizuya Noodles, we are establishing a food safety management system in preparation for ISO 22000 certification.
We have implemented standardized manuals and checks for cleaning, inspection, and maintenance,
continuing to ensure safety through the combination of skilled hands, keen senses, and unwavering integrity.

1. Hygiene Management System Based on ISO 22000

We are establishing internal systems and rules in preparation for ISO 22000 certification for our food safety management system. By standardizing cleaning and inspection procedures, reviewing inspection items, and continuously sharing and addressing issues, we consistently improve and maintain high product quality.

2. Thorough Daily Hygiene Management and Record-Keeping

At our production sites, daily checklists and cleaning records are diligently maintained. Strict hygiene zoning is enforced, and everyone follows rules to prevent foreign matter contamination. This consistent daily effort and thorough record-keeping form the foundation of Shimizuya Noodles’ quality and trustworthiness.

3. Training People to Sustain Quality

Maintaining quality depends on the awareness and skills of each individual on the production floor. We document the expertise of veteran artisans, create technical manuals, and share work records. Through the education of younger and new staff, we pass on these skills while working as a team to improve both quality and processes. At Shimizuya Noodles, our sense of safety and reliability is built from cultivating people.

4. Traceability and Rapid Response System

We record every step from raw material receipt to production and shipment, managing the history of each lot. Regular forward- and backward-tracing drills are conducted to ensure that, in the unlikely event of an issue, the cause can be quickly identified and corrective measures implemented.
